cassandra-quarkus fixes once we get a driver with JAVA-2663

Description

A few small things that need to happen once we upgrade cassandra-quarkus to use a Java driver version which includes JAVA-2663:

  • The NativeSubstitutions class should be removed entirely

  • The explicit force of DefaultDriverOption.TIMESTAMP_GENERATOR_FORCE_JAVA_CLOCK to true can be removed as well

  • The UnsignedBytesSubstitution can be removed as well

    • Assuming the same substitution has been added to the driver core as part of
